Since his beginning in 1972, Guy Bossard has cultivated all his vineyards organically and, since 1998, is certified by Demeter with all his 22 hectares of vines. “I can only express the different soils of our vineyards when I work the soils,” he says. As his successor, to whom he “will transfer the reigns slowly over several years,” he chose Fred, a former information technologist who changed his life, but not his passion for great wines. As member of the group “Renaissance des Appellations,” Guy and Fred aim “to restore the reputation of the vineyards of the Nantes region.” “We produce dry white wines for keeping, which are at the same time crystal clear, of a great purity and impressed with an exacerbated minerality,” they sum up their goals.

12 months of skin maceration in 400L amphoras.
Domaine de l’Ecu’s Fred Niger is without a doubt one of the greatest interpreters of the use of amphora for macerations. This Chardonnay is clear proof of this. A wine
that can excite for its stylistic precision and ease of drinking. Tantalizing and
expressive nose with notes of quince, apricot, dried fig, currant and bitter orange
peel. Clean, frank, direct attack; very dry and taut wine that develops in the middle
part of the mouth to become more charming and playful as the minutes pass. Soft,
silky tannins give volume and length to the drink. Closes on saffron notes for a very
long persistence.

TASTING NOTE
Cabernet Franc planted in a parcel dominated by granite. Biodynamically farmed,
soils are worked, leaf-pulling is done manually and all fruit is harvested by hand. At
harvest, all fruit is received in the winery via gravity (no pumps). Destemmed, 12
day cuvaison, all indigenous yeast fermentation. Aged in combination of amphora
and old barrles for 15 months. Zero sulfur added.
Nose full, flattering, round, expressive, on black fruits and red berries, ripe,
strawberry, currant, hints of white pepper. Suave attack, mid-palate taut but
charming, tannins still tight but velvety, beautiful volume, rich, deep, delicate,
chiselled fruit, sweet spice notes.
